Grilled Bass with spring veg and a lemon and mustard dressing
Pure simplicity and a great celebration of seasonal vegetables. Easy and delicious.
Ingredients: spring vegetables- use any you like- here I used spring onion, red onion, fennel bulb and tenderstem broccoli, Seabass fillets, 1tsp Dijon mustard, 1 tsp honey, Juice of one lemon, olive oil (3 x amount of lemon juice).
1) For the dressing - squeeze the lemon juice, mustard and honey and oil in an old jam jar and shake. add salt and pepper to taste.
2) Chop the veg in to similar sizes if needed then coat them in a little olive oil with salt and pepper.
3) I used a griddle pan here but you could grill or BBQ. Getting some char marks in the key for the Smokey flavour.
4) grill you veg for a couple of minutes each side- try and retain a bit of crunch. Then dress them in a bowl.
5) Grill your bass and then serve!
