Crunchy Apple and Smoked Mackerel Salad
Crunchy aniseed and apple with soft beetroot and flaky mackerel. 5 ingredients, 5 mins to make.
Ingredients: Smoked Macks, half a fennel bulb, 1 small apple, one cooked beetroot, a hand full of flat leaf parsley, spring onion, balsamic vinegar, olivie oil.
1) Thinly slice the fennel, apple, spring onion and beetroot.
2) Add sliced veg to a bowl and then add flaked fish and parsley leaves.
3) Dress with Balsamic vinegar and olive oil (1:3 ratio).
4) Mix together then spinkle on some diced spring onion.
