Salmon and falafel wrap with a tahini dressing
Fish can be a faff at lunch but cooking from frozen makes life so easy- this recipe is a favorite of ours and makes a healthy luch feel like a real treat.
what you will need: Houmous, red onions picked in lime, cucumber, tomato, falafels, tahini, lemon juice, olive oil, a flat bread of some sort, water cress (or similar) Chili powder and sumac (optional)
Method:
place your frozen slamon on a baking tray and cook for 35 mins at 180C- remove from the oven and let it rest while you prepare the rest of the wrap
finely slice a red onion add salt and lime juice in a small bowl. this will quick pickle the onion
for the tahini dressing- add a tsp of tahini into a jam jar with the juice of half a lemon and. add apporx 3:1 oil to lemon. put the lid on and shake. done.
chop up tomato and cucumber- sprinkle a bit of salt on these for seasoning
warm the flafels in the oven for a bit and the wrap
smear some houmous on the wrap- then add the falfels, flaked slamon, veg, picked onions, water cress and then dress with the tahini dressing and sprinkle on some sumac and chilli powder
wrap it up and tuck in!
