Bass with a sun-dried tomato, garlic and harrissa crumb
This is a delicious bass dish and great if you are cooking for lots of people.
what you will need: 30g stale or dry bread, 30g sundried tomatoes,1/2 a clove of garlic, 25g parmesan cheeze 2tsp of harissa, 2 Bass fillets.
Method:
- Stale bread is ideal but if you dont have any you can dry some bread chnks in the oven fro 20 mins or so
- Add all the ingredients into a blender and blend into a rough crumb
- Place the bass fillets- skin side down- in a baking tray
- Cover the fillets in a layer of crumb and cook at 180C for 8-10 mins. the crumb should catch slighlty at the edges and be nice a crispy
served here with roast broccoli and boiled saffron potatoes- Yum
