Salmon burger
Salmon burgers can be a little fragile until cooked but if you take care the result is an absolutely delicious alternative to a beef burger.
What you will need: a frying pan and a mixing bowl
Ingredients: Finely diced salmon (2 x 140g fillets), 1 tsp English mustard, salt + pepper, 1/2 tsp chilli flakes, generous pinch of a finely chopped herb (parsley used here).
Take your salmon and place it on a flat board. Remove the skin with a knife and then finely dice the salmon to a consistency like a coarse mince.
add this to a mixing bowl with the other ingredients
mix thoroughly and then place the mixture in the fridge for 30 mins.
shape into pattys and place directly into hot oil in a pan. At this point the patty will be a little fragile but as the cook the will firm up.
Toast a brioche bun and add your burger when ready!
The burger pictured had quick pickled (salt and white wine vinigar) cucumber slices with a burger sauce made out of sriracha hot sauce and mayonnaise
