Plaice fried in butter with spinach and chips
Have you tried plaice? Its great- really quick to cook and adds a bit of variety to your week.
What you will need: A frying pan, a baking tray and a sauce pan.
Ingredients: Urchin plaice fillet, Oven chips, shallot, garlic, spinach. for the tartar sauce - Mayonnaise, diced shallot, gherkins, capers, parsley.

put your oven chips in a baking tray and put them in the oven first
once they are going then turn your attention to the fish

season with salt and then lightly dust the plaice fillet with flour.

In a frying pan melt a knob of butter and add a glug of olive oil
Add the fish, skin- side down on a medium heat and leave it to fry in the butter.
In a deep pan fry half a shallot and a small garlic clove in some olive oil until softened.

Add the spinach and mix every so often to stop it catching on the bottom, after a minute or two it will wilt down. Remove the spinach and put it in a colander for any excess liquid to drip away.

The fish should be nice and brown by now, flip it over to and fry for a further 2 mins, then remove and rest.

Remove the chips from the oven and serve with tartar sauce or ketchup
