Grilled Sardines with salty gremolata
Sardines are so packed with flavour and goodness that they do not need a lot doing to them. Gremolata is a very simple preparation with goes well with oily fish like sardines and tuna.
Gremolata salt: Zest of one lemon, 1 small finely diced or minced garlic clove, a handful of parsley finely diced. 2 tablespoons of seasalt flakes.
Mix these ingredients in a bowl and set aside.
On a BBQ or under the grill, cook your sardines for a couple on minutes on each side, or until the flesh easily separates from the spine.
put aside to rest and sprinkle the fish with your gremolata mix
serve with chips or eat as a starter. Enjoy!
