Chorizo, potato and haddock tray bake.
In our quest for delicious fish simplicity we will be posting a lot more tray bakes recipes - quick easy and delicious.
This recipe honestly takes 10 minutes to prepare and will feed many if needed. It is also delicious, with the spicy Mediterranean flavours complementing the haddock beautifully.
You will need- an oven proof baking tray
Ingredients- Urchin Haddock fillets, potatoes (waxy yellow varieties work best), chorizo, shallots, garlic, green olives, baby plum tomatoes, paprika, olive oil and saffron (optional)
Finely slice your shallots, potatoes and garlic.
Add some olive oil to your baking tray then add your sliced potatoes, shallots, garlic, olives, tomatoes saffron and a good dusting of paprika. add plenty of olive oil- enough for all the potato slices to be covered in a thin film. The mixture should fill 3/4 of the tray.
Mix everything well then compress down so all the ingredients are trapped between layers of potato and shallot.
put the tray in the oven set to 180C and leave it for approx 45 mins.
At this point the tomatoes will have coloured and burst and the potatoes will be golden on top. time to add your fish
Season your haddock with salt, pepper and olive oil and place them on top of the potatoes
return to the oven for 6 mins or under the grill for crispy skin
